Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs, beaten
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup pineapple jam or marmalade
Instructions:
- Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs and vanilla extract and mix well.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture and mix until well combined.
- Roll the dough into small balls (about the size of a cherry) and place them about 2 inches apart on the prepared baking sheet. Use your thumb or a small spoon to create an indentation in the center of each ball.
- Fill each indentation with about 1 teaspoon of pineapple jam or marmalade.
- Bake the cookies for 12-15 minutes, or until they are lightly golden.
